Job Description Summary

Accountable for the overall success of the culinary mission and enhancing offerings for all aspects of our food experience. Exhibits culinary talents by leading the staff and managing all food related functions. Works to continually improve guest and employee satisfaction while maximizing the financial performance in all areas of responsibility. Responsible for guiding and developing staff, including direct reports. Must ensure sanitation and food standards are achieved. Areas of responsibility comprise overseeing all menu development, ingredient selection, food preparation, and all support areas of the food department.

Job Description

Essential Functions:
  • Sources unique and cuisine-appropriate quality food.
  • Responsible for the creation of menus and ensuring creativity and quality as it relates to the culinary experience.
  • Approves the preparation lists, recipe development, inventory, and ordering of all food and cleaning supplies.
  • Keeps current on developing trends in the food service industry.
  • Collaborates with the Director of F&B and Sous Chefs to set item prices.
  • Maintains the kitchen and surrounding areas in conditions that meet the company standards and health code regulations.
  • Monitors inventory and purchasing supplies and food from approved vendors.
  • Hires, trains, and supervises Sous Chefs and kitchen staff.
  • Directs kitchen staff on meal preparation, creation, plating, and delivery.
  • Identifying and introducing new culinary techniques.
  • Preparing meals and completing prep support as needed.
Other Functions:
  • Create standards to control the quality of food products, services, and equipment.
  • Direct Sous Chef on inventories, cost controls, requisitioning, and issuing supplies and equipment for food production.
  • Direct supervision of employees, sanitation and safety, menu planning, and related production activities, and manages the daily assignments for culinary staff.
  • Creates, produces, and fabricates meats and fish; cleans and maintains work areas, utensils, and equipment.
  • Maintains a high level of health, sanitation, and safety standards for food service production staff.
  • Consistently maintains standards of quality, presentation, and storage for all food products.
  • Makes recommendations for maintenance, repair, and upkeep of the kitchen, its equipment, and other areas as appropriate.
Required Education, Knowledge, Skills and Abilities:
  • Associate's degree in Culinary Arts, with at least five years of experience in a culinary management position in a fine dining or production environment or an equivalent combination of education and experience.
  • Knowledge of food handling, safety, and sanitation for a commercial kitchen.
  • Demonstrated knowledge of high volume production (i.e., buffet, private dining, or conference dining).
  • Demonstrated knowledge of professional kitchen equipment, its function, maintenance, and care.
  • Knowledge of supplies, equipment, materials, and/or services ordering and inventory control.
  • Knowledge of current culinary trends; strong presentation skills.
  • Maintains health, sanitation, and safety standards for food service production in order to comply with standards and external regulations.
  • Ability to present and display a professional demeanor at all times.
  • Excellent communication skills, both verbal and written; strong interpersonal skills.
  • Ability to work a flexible schedule; nights and weekends.
  • Ability to meet the requirements of the University's automobile insurance.
Preferred Education, Knowledge, Skills, Abilities:
  • Must possess a working proficiency of computer skills and knowledge of MS - Exchange, Word, Excel, PowerPoint, Recipe and Cost Control software, and Point of Sale software.
  • Excellent human relations skills, with a talent for motivating staff and guests.
  • Good organizational skills with the ability to work independently and with a team.
  • Ability to function under pressure, set priorities, and adjust to changing conditions.
  • Has a demonstrated high work ethic, patience, and coach training leadership style, with a sense of responsibility for the Executive Chef leadership position.

Physical Requirements:
  • Medium work; climbing, crouching, standing, walking, lifting, fingering, grasping, feeling, talking, hearing. Visual acuity to determine neatness and thoroughness of work assignments. Subject to both inside and outside activities.
